Turkey Vegetable Soup serves 3-4
2 Garlic cloves
1 Tablespoon Olive Oil
1/3 C Onions
3 Cups of Veggies (your choice) *
8 oz can Turkey broth or Chicken Broth
8 oz can Tomato sauce or Puree
8 oz can of water
2 cups cut up leftover cooked turkey breast
Salt & Pepper to taste
* I used red,green, yellow peppers, celery, mushrooms & cauliflower. all of these were veggies that I got from my garden except for the mushrooms.
Saute garlic & onion in olive oil until onion is transparent then add your veggies & saute just a little more. Add your broth and tomato sauce, water, turkey, salt and pepper.
Bring to a boil, boil 2 minutes, then turn heat down until soup is simmering. Simmer for 20-30 minutes or until veggies are tender.
If using veggies that take longer to cook wait until they are almost done to add the cooked turkey.
We like alot of veggies in our soups and only a little broth. If you like more broth than veggies you can add more of the liquid and less of the veggies.
Another thing you can do is add egg noodles when the soup has about 8 minutes left to cook.
